自春秋时燕国建都于此，以后陆续有辽、金、元、明不断地输往北京。
但当时京城普通居民十之七八，包括小康之家，皆以杂粮为主食。如遇灾年或战乱，贫民往往连杂合面（玉米面加少许黄豆面）也难以吃到。贫民小户终年很少食香油。中等人家，吃肉也少，只有到了年节，为了祭祀或待客，才宰鸡杀鹅，买鱼买肉。据清末的统计，京师居民号称120万，日食猪约600头，羊800只。逢年过节需用量则须加倍。鱼鲜一类水产品，主要来自津沽，但价格昂贵，一般平民难以问津。近几十年来，北京人口激增，全国各地来北京定居的人口占相当大的比重，他们带来了各地区的饮食习俗，这是我国各地饮食风俗空前的大融合。北京传统的饮食习惯、饮食风俗逐渐淡化。
